Exelent and affordable
Wonderful product, I'm not sure about the propaganda of carrageenan in some sites, but I cannot find some other effective substitute, this brand is affordable and works amazing.

Kosher carrageenan
This carrageenan is for making vegan cheese that actually melts. Non-GMO, Gluten-free and certificated Vegan. For me, the most important is the kosher certification. Thank you!

Great thickener
Bought this for the purpose of making vegan nut cheese, but it works great for thickening pie filling too. much smoother consistency than other types of thickeners, and easier to make set up. great product, great company to work with, will definitely buy from again.

Gelling Properties Vary Lot to Lot
I bought an 8 ounce package of Druids Grove Kappa Carrageenan along with their Lactic Acid on Amazon for vegan cheesemaking. The Kappa Carrageenan has not been gelling properly. Ingredients remain a thick liquid but do not set to a cheese consistency unless the quantity of carrageenan is doubled. I contacted the company and they explained that the gelling properties vary from batch to batch. I was told the natural gel range of kappa carrageenan is 400-1300 GCM. (GCM refers to the gel strength.) Druids Grove for the most part, have lots varying between 700-1100 GCM. The particular batch I purchased was identified by Druids Grove as falling in the 795 GCM range. The lot # on my bag is #27918 with a best by date of 05/25/25. When making a recipe, the lot to lot GCM variability, unsurprisingly, results in inconsistency of the end product. Kappa Carrageenan is too expensive to have to use twice as much as a recipe calls for. The GCM number should be explained and noted on the packaging so customers know what they are dealing with. I would have appreciated knowing I had a weak batch of Kappa Carrageenan before I started using it. Modernist Pantry is the distributor of Druids Grove.Update: I was sent a replacement bag of Kappa Carrageenan by Druids Grove’s distributor Modernist Pantry. Unfortunately, the GCM gel score was stated by customer service at Modernist Pantry, as being the same as the bag I already had.The new bag I received is marked:Lot #28578 Best By date: 08/14/25 If the new bag performs differently than my reviewed bag, I’ll update my review to reflect it.
